Fennel Kohlrabi Slaw

  • 1 large or two medium carrots, peeled and cut into thin matchsticks
  • 1 fennel bulb, cut into thin matchsticks, reserve fronds for garnish
  • 1 kohlrabi, peeled and cut into matchsticks

  • ½ of a red onion, finely chopped
  • 2 cups of cabbage, shredded
  • 2 tbsp of mayo or sour cream
  • 1 tbsp of lemon juice
  • 1 tsp of Dijon mustard
  • Celery salt, sea salt, and black pepper to taste
  • 1 tbsp apple cider vinegar
  • ¼ cup of olive oil
  • 1 tsp honey
  • 1 garlic clove, mince or grated
  • 1 tbsp of dried dill
  • 1 tbsp of dried parsley
  • (optional) add one small apple for extra sweetness


1) Whisk the mayo or sour cream, honey, garlic, vinegar, mustard, olive oil, spices, herbs, and lemon juice in a large bowl.

2) Add fennel, kohlrabi, carrot, red onion, cabbage, and apple, if desired. Stir gently to coat and top with fennel fronds and salt and pepper to taste.
